i figured it would look better then a plain piece of plactic would since that was from a 1/1000th nx-01

It needs an in game reason to make the ship more interesting. Why was the extension put there? Giant roving movie theater to wow primitive people? Super sensor package for a long range fleet scout? Luxury VIP quarters making it a diplomatic transport?

A story enhances the ship's build in my mind.

Is it a refit thing, built after the ship was for a specialized mission to make useful a ship no longer fit for the front line?

Look at RV Calypso. It was a mine sweeper in WWII. Its final configuration looked nothing like what it started as. The Baltimore class cruisers of WWII again underwent massive changes to the point the designers would not recognize them.

It is something to have fun with.

Per example as per one suggestion. A TMP destroyer built during the Klingon tensions and declared less useful in the wake of the Praxis disaster and the subsequent diplomatic cooling between the Federation and the Klingons was sent back to the yard and refitted as a science ship with an advanced sensor package for mapping the interiors of gas nebula, star forming regions and new star systems..
