There are models of a similar design to this

Moongrim, your pictures are WAY better than mine! What a beautiful ship, and, yes, this one totally immersed into the canon design!

THIS one I would buy a kit... unfortunately there is not any way that I pay the steep prices these resin kits are asked for!

The ship Moongrim posted (USS Bonaventure) is the ship that there is a model for at MVM's website in different scales. That's why I said there were models of a "similar design" to the USS Phoenix. But if someone really wants a Phoenix and not a Bonaventure, I don't think it would take much to modify the latter ship into the former.
