Awesome! I don't know how I missed this post and only now I saw that! This is indeed an outstanding project and I can say that I wouldn't have the guts to face something like this. Some time ago I had the old cutaway kit and even having everything ready to go there it still looked like to be a lot of work! Congratulations, keep the great work!
On a side note, observing the Enterprise in the cutaway view I noticed two things... first how big it is and second how the neat external design sacrificed the internal room because the slopes in the saucer. I think that if it was the real life they would make the saucer as a plain flat disc instead for a better space optimization!

Still working on this one. But I started to cut the hull, and I taped it all together to get an idea of what I need to do

I added some sheet styrene under the hanger and cargo bays so that it wouldn't look hollow underneath.
I scratch built my torpedo bay today.
